Apple Bran Muffins

Wonderful tasting and very healthy muffins.  I make a batch or two and freeze them in ziploc bags so I can just pull one out and pop it in the microwave in the morning, or pull it out the night before so it's at room temperature in the AM.  


1 1/2 cups wheat bran
1 cup low fat milk
1/4 cup promise spread, melted
2 Tbsp molasses
1 large apple shredded (I use granny smith because I like the tartness)
1/2 cup whole wheat flour
2 Tbsp toasted wheat germ
2 tsp baking powder
1/2 tsp baking soda
2 egg whites



Lightly grease 12 muffin cups.  In a medium bowl combine bran and milk.  Let stand three minutes.  Stir in promise, molasses and apple.  


Combine flours, wheat germ, baking powder and baking soda.  Stir into bran mixture.  Fold in egg whites.  Turn into prepared muffin cups.  


Bake in a pre-heated 350 Deg oven 20 - 25 minutes or until done.


(before baking you can also top with brown sugar)


They are healthy and the kids love 'em!
