Easy Salisbury Steak

I got this recipe from Sonya Floyd several years ago, and it was always a family favorite.  It's funny though, that I had forgotten about it, until we started this blog and I was going through my recipe box to find recipes to share.  I can't believe I had forgotten about this one.  It is SO good, and super fast and easy!


1 egg beaten
1/2 cup soft break crumbs
1/4 cup chopped onion
2 tsp worcestershire sauce
1/2 tsp garlic powder
1 lb. ground lean ground beef



Gravy:
2 Tbsp flour
1 can (14 1/2 oz) beef broth
1/4 cup ketchup
1 Tbsp worcestershire sauce
1/4 tsp basil
1 jar sliced mushrooms


In a bowl combine first five ingredients.  Crumble beef over mixture and mix well.  Shape into four patties.  Place in a shallow 2 Qt.  microwave safe dish.  Cover and microwave at 70% power for 6 minutes.  Meanwhile, in a bowl combine flour and broth until smooth.  Stir in the ketchup, worcestershire sauce, basil and mushrooms.


Turn patties and drain excess liquid.  Pour gravy over patties.  Cover and microwave at 70% power for 6-8 minutes.  Gently stir gravy; cover and let stand for 5 minutes.


Serve over mashed potatoes.


This is wonderful and so easy - especially when you are in a time crunch and still want a healthy meal.
