Hearty Enchiladas

Hearty Enchiladas
1 lb of ground beef
onion
1 jar Picante sauce (or substitue 1 10 3/4 oz can enchilada sauce)
1 pkg corn or flour torillas (this recipe will probably take 10)
velveeta cheese
1 10 3/4 oz can chili no beans
sliced American cheese


Preheat oven to 375.
Prep: Chop onions to put into ground beef. (I usually use about half of a med size onion) It just depends on how much onion you like as to how much you want to use.
Cook ground beef and onion in a skillet. Drain the grease after cooked. Add whole jar of picante sauce or enchilada sauce to the beef mixture. Heat the tortillas in the microwave for about 20-30 seconds. Cut the velveeta cheese into desired size. I usually slice off the end and then cut that into 4 or 5 long pieces. Place the cheese into the tortilla then spoon some meat mixture onto tortilla. Roll tortilla and then place in a 10 by 13 dish. Repeat until the dish is full.  Spoon chili on top of the tortillas and then cover the tortillas with the sliced cheese. Cook for about 20 minutes or until cheese is melted. This usually serves about 4 people.
