Stuffed Mushrooms

This is one of my husband's FAVORITE appetizers.  On Christmas Eve, we like to do finger foods instead of a big meal - since I'm usually prepping lots of stuff for Christmas dinner - and this is the first thing he requests every year.  These are a big crowd pleaser as well.  :)


24 large mushrooms
1/4 cup sliced green onion (about 2 onions)
1 clove garlic, minced
1/4 cup butter or margarine
2/3 cups fine dry bread crumbs (I use the Italian seasoned crumbs, but plain would be fine as well)
1/2 cup shredded cheese (the original recipe called for cheddar, but I always use 3 or 5 cheese Italian)

1.) Preheat oven to 425 degrees.
2.) Clean mushrooms. Remove stems.  Chop enough stems to make about 1 cup.
3.) In a medium saucepan, cook chopped stems, green onions, and garlic in butter until tender.
4.) Stir in bread crumbs and cheese.
5.) Spoon mixture into mushroom caps.
6.) Bake in preheated oven for 8-10 minutes
