2 Frozen Deep dish pie shells
2 Frozen Regular pie shells
1 Rotisserie chicken or 2 lg. cooked chicken breasts- chunked or shredded
1 can cream of chicken soup
1 Lg. can Veg-all mixed veggies-drained
1 can cream of potato soup
1 can each of green beans and corn- drained
1/2 tsp. garlic powder
1/2 tsp. salt
LOTS of black pepper! :)
Preheat oven to 350 degrees. Keep pie shells frozen until use. Bake the deep dish pie shells for 10 minutes before filling to ensure being fully cooked. Place all ingredients into a large bowl and mix. Then split mixture between both deep dish pie shells after removing pie shells from oven. Take regular pie shells out of freezer and turn upside down on top of mixture removing the tin that pie shell came in. Seal as much as possible on sides or just make sure they are evenly matched up. Then make an egg wash out of one egg and 1 TBlsp. water and beat. Lightly brush egg wash over the top of pie shell and along edges to ensure a beautiful browning. Then with a sharp knife, cut an X in the middle to ensure steam can pass through and cook inside evenly. Bake until golden brown...between 40 to 50 minutes. Ovens may vary so just keep an eye on it. I like mine to brown well so that the crust is flaky and a little crunchy!
NOTE: You can double this recipe easily. I keep with the same amount of chicken. I just double the canned ingredients. I don't double the seasonings, though. It just doesn't need it. This is a 20 year recipe that is tried and true! :)

ReplyDeleteOh my i made this recipe today and not only was it to die for it was a Huge hit with the family. We are not really white meat eaters so i boiled about 7 legs bc i wanted extra chicken in it. The cust on top was so flaky and delicious! My kids are not veggie eaters at all so fir what it calls for made it just right. I thought at first i would need an extra can of soup bc of the extra chicken but decided against it and just hoped it would turn out and i must say it was absolutely PERFECT!! Thanks so much for your contribution it will forever be a new meal for us to enjoy for a life time. Please go and try it and see how big of a hit it will be for your family.
