Chunky Chicken Salad


This is a recipe that I "created" a few years ago.  My husband and I LOVE LOVE LOVE this chicken salad!  It is seriously yummy!!!  (And everyone I've made it for has gobbled it up!)  But its not a "sandwich chicken salad."  Its way to yummy and chunky for that!  This recipe is best served with your favorite cracker!  :)



"Chunky Chicken Salad"
3-4 chicken breasts - boiled or baked and cut into bite-size pieces
2 red apples - cored, peeled, and diced (I always add a little lemon juice to keep from browing)
2-3 cups halved grapes - green, red, or a combo of both
1/4 of a small or medium red onion - diced
1 small vidalia onion - diced
celery salt - to taste
pepper - to taste
mayonnaise - to taste

Mix the chicken, apples, grapes, red onion and vidalia onion in a large bowl.
Add celery salt, pepper and mayo and mix well.
Serve with your favorite cracker.



(Be careful with the red onion.  Don't put too much into the chicken salad.  - Especially if you are making it a day ahead.  Red onion gets spicier as it sits in the fridge!)

The mix of the sour grapes, sweet apples, spicy red onion, and sweet vidalia onion is just FANTASTIC!!!!!
