I love cornbread. All kinds. Seriously. I'm a big fan. And this recipe is no different. Its delish! (Plus, you feel a little better about yourself because its got broccoli in it.) :)
1 large sweet Vidalia onion, finely chopped
1 (10oz) package frozen, chopped broccoli, thawed
3/4 cup cottage cheese
4 beaten eggs
1 (7.5oz) package cornbread mix, such as Jiffy
1 tsp salt
1/2 cup margarine
1.) Preheat oven to 425 degrees. Grease 9x9 inch metal pan.
2.) In a bowl, mix all together. Pour into pan.
3.) Bake for 45 minutes or until top is brown and casserole has risen.
