This is a good "all-in-on" meal. No need to make side dishes when your veggies are right in there. Although, this would be yummy with aside of Golden Sweet Cornbread or "Almost" Red Lobster Cheese Biscuits. You could also serve this over rice or orzo if you like. :)
2 tsp olive oil
1 lb chicken
1 garlic clove, minced
1/2 onion, chopped
1 (10oz) package frozen green beans
1 (16oz) can chopped tomatoes with juice
2 tsp parsley
1/2 tsp paprika
salt and papper to taste
1.) Heat oil in skillet over Medium heat. Add chicken and brown on all sides. Add garlic and onion and saute until softened.
2.) Add beans, tomatoes with juice, parsley and paprika.
3.) Cover, reduce heat and simmer until chicken is done, about 15 minutes. Season with salt and pepper.
