When I don't have Jiffy Mix, this is the cornbread I like to make :-) Mama's recipe!
1 cup cornmeal
1 cup all-purpose flour
1/2 cup sugar
4 tsp baking powder
1/2 tsp salt
1 egg
1 cup milk
1/4 cup oil
Mix all ingredients, and pour into a ~ 9 x 11 inch baking dish that has been sprayed with non-stick spray. Bake 18-20 minutes at 350 deg. F
