This is one of the hubby's FAVORITE recipes! He is overjoyed when he comes home to this meal cooking on the stove.
8 oz uncooked pasta
1-2 chicken breasts
1 (15oz) can chunky Italian-style tomato sauce
1 cup sliced onions
1 cup sliced mushrooms
1 cup chopped green bell pepper
Nonstick cooking spray
Salt and pepper - to taste
1.) Cook pasta according to package directions; drain.
2.) Coat a large skillet with cooking spray; heat over medium heat. Cook chicken 3-4 minutes per side or until lightly browned. Remove to plate.
3) Throw onions, mushrooms and bell peppers into skillet and cook for 3-4 minutes or until onions and peppers become translucent.
4.) Add sauce and chicken to skillet; season with salt and pepper. Reduce heat; simmer 12-15 minutes, or until chicken is cooked through.
5.) Serve over pasta.
Note - I often throw a pinch of red pepper flakes in there to give it a bit of a "kick." ;)
