3 1/3 c. veg. broth 3/4 c. dry lentils (rinsed)
3/4 c. chopped onion 1/2 c. uncooked brown rice
1/4 tsp. salt 1/2 tsp. dry basil
1/4 tsp. thyme 1/4 tsp. dry oregano (I omit this)
1/8 tsp. pepper 1/8 tsp. garlic powder
Preheat oven to 350 degrees. Mix all ingredients, stirring well. Turn into 1 1/2 qu. covered casserole. Bake covered for 90 minutes to 2 hrs, until rice and lentils are cooked. Stir twice during baking. Serves 4.
This is soooo yummy with any side veggies and/or roasted chicken! :) So easy and extremely healthy. Your kids will go back for seconds. I never have leftovers!
