What's For Supper? - Black Bean Taco Chili

Hello from the mountains of NC.  I am posting a great crock pot recipe that I have refined until it is my own.  It is a conglomeration of several recipes and it is easy.  With time crunches, jobs, chores, school, and life, we can all use some help now and then.  So here is an easy, healthy meal for your whole family!

Black bean taco chili

1-2 lb ground beef ($4)
3 cloves minced garlic ($.10)
1 medium onion diced ($.35)
1 14 oz can of petite diced tomatoes ($.60)
1 14 oz can of diced tomatoes with green chiles ($.80)
1 14 oz can of corn($.85)
2 14 oz cans of black beans($.60 ea)
1 packet of taco seasoning ($.50)
1/2 packet of ranch dip mix ($.60)
1 c of beef broth ($.94)


Brown ground beef with onion and garlic.  Drain if necessary.
While it is browning, add to crock pot all of the other ingredients.  Add beef mixture and stir until mixed completely.  Set the crock pot to medium or if like mine you have a temp setting, then 250-275.  Cook for 5-8 hours.  You cannot over cook it.  Serve with grated cheese, cornbread(or bread of any sort), sour cream, or any other topping.  All this for around $9 will feed my family of 6!

(Tip for time saving: if you are browning meat for 1 meal and you know you will need it for another meal, then do it all together and save time.  For example, if your are having the above meal and know that you will be having spaghetti sauce, lasagna, or veg beef soup, brown meat for all three.  It takes the same amount of time as doing it for 1 meal.  I then portion it out and freeze it until I need it.  Then I can just toss it in the pot or crock pot and go to it!)
