Sarita's Carbonara

I had a limited amount of time and energy so this is what I came up with.

1 lb of pasta
2 boiled chicken breasts shredded or cubed(done earlier for another meal)
4 slices bacon chopped
1/4 onion chopped
2 cloves garlic chopped
3 tbsp oil
1 pat butter
Parmesan cheese



I had already boiled some chicken breasts earlier and so I used what I had had left over and diced it.
Cook the bacon in the oil to render out the fat.  Yes I know this is a lot of oil but it is the only sauce you will use.  Add in onions(I also put in finely diced bell pepper because I had it). Cook until translucent and add in garlic.  Be ready with your boiled pasta when the garlic goes in cause you don't want to burn the garlic.  Take the past straight from the pot with a pasta spoon and put it in the pan with the bacon.  You want a little pasta water to come with the noodles but not a lot.  Mix all of it together until all pasta is coated with oil.  Add pat of butter and salt and pepper to taste.  Garnish with Parmesan if you desire and serve with a salad and you have a great meal.

A traditional carbonara(means cooked with bacon in Italian) has an egg added to the end but frankly I didn't have the energy yesterday.  If you would like to do it this way, here are the instructions:

After mixing the pasta in the oil and bacon mixture, remove from the heat and add an egg that you have beaten well.  Stir mixture with tongs constantly so the egg doesn't scramble.  Serve with Parmesan.

This is so good and relatively easy!
