Ingredients:
6 Thin sliced pork chops
1/2 onion cut into slivers
1/2 bag baby carrots
1/2 bag red potatoes quartered (peeled or not)
salt, pepper, and garlic pepper
Preheat oven to 300 degrees and lightly spray 9x13 baking dish.
Quarter potatoes into baking dish then add carrots and onions.
Pour about 2 to3 Tbls. of olive oil on top.
Generously sprinkle salt, pepper, and garlic pepper on top then toss with hands.
Now, lay pork chops on top and generously sprinkle salt, pepper, and garlic pepper on top of chops.
I then put about 1 to 2 inches of water at the bottom, filling from one of the corners as not to let the water rinse the seasoning off of any of the food.
Cover with tin foil and put in oven for up to 2 hours. I have actually put it in the oven at 275 degrees for 2 1/2 hours and the chops were so tender they could be cut with a fork.
At about 1 hour I pour 2 cups of the broth from the baking dish into a measuring cup and use that broth to make some yummy rice to go with it. Just don't forget to add more water when you put it back into the oven.
You can serve this with any veggie or salad of your choice! The chops can also be replaced with thin cut chicken breasts.
This is sooooooo yummy and easy to throw into a pan and into the oven at the last minute!!!! I have doubled this recipe and had the rest for leftovers later in the week. I just throw the 9x13 back into a cold oven and turn the oven on to warm it back up!
